Lemon Coconut Pistachio Bliss Balls

Serves: 12 balls
- 1½ cups unsweetened shredded coconut
- ¾ cups raw shelled pistachios
- juice and zest of 1 lemon
- 1 Medjool date*
- 2 tbsp coconut oil, melted
- ¼ tsp ginger
- pinch sea salt
- Put all ingredients in a food processor or high-powered blender. Process until a sticky dough begins to form, about 5 minutes.
- Roll into 12 balls. If the dough is not sticking together when you press it, then add a teaspoon of water or another date.
- Chill for 1 hour. Store in the fridge for 2 weeks or the freezer for 1 month.
*To make this recipe completely sugar-free, leave out the date, adding in water 1 teaspoon at a time until the dough sticks together.
