One Bowl Banana Oatmeal Breakfast Cookies

Ingredients
  • 2 overripe bananas
  • ½ cup nut/seed butter (I used creamy peanut butter)
  • 2 cups rolled oats
  • 2 tbsp ground flax seed
  • 1 tsp cinnamon
  • ½ tsp coarse kosher salt
Instructions
  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper and set aside.
  2. Mash the bananas in a bowl, then whisk in the nut butter. Add in the remaining ingredients, stirring until just combined.
  3. Scoop out 10 cookies onto the prepared baking sheet. Flatten each slightly, since they will bake in whatever shape you put them in the oven.
  4. Bake for 12-14 minutes. They'll still feel soft. Let them cool on the pan for 5 minutes before transferring to a wire rack to finish cooling.
  5. Store in a container in the fridge for 1 week or in the freezer for 1 month. If you need to layer them, then put a piece of parchment paper in between the cookies.
