Chewiest Double Chocolate Cookies

Ingredients
  • ⅓ cup nut or seed butter
  • ¼ cup maple syrup
  • 1 tsp pure vanilla extract
  • ⅓ cup almond flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking powder
  • ⅛ tsp kosher salt
  • chocolate chips
Instructions
  1. Preheat the oven to 350 degree F. Line a baking sheet with parchment paper and set aside.
  2. In a bowl, mix the nut/seed butter, maple syrup, and vanilla until fully combined. Next, add in the dry ingredients, except the chocolate chips, stirring together well.
  3. Once the dough is completely mixed, divide into 6 cookies. Flatten each slightly on the baking sheet, then press chocolate chips into the top.
  4. Bake for 10-12 minutes. The cookies may look a little underdone, but they harden as they cool, so make sure not to overcook them. Let cool on the pan for 5 minutes before removing to a cooling rack.
  5. Store in an airtight container for 1 week.
