Paleo Baked Chicken Nuggets

Ingredients
  • 1 lb chicken breasts, cut into long strips
  • 1 egg
  • ½ cup almond flour
  • 1 tsp oregano
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp kosher salt
Instructions
  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Beat the egg in one bowl, then in another whisk together the almond flour and spices.
  3. Dip each each piece of chicken into the egg, then coat it fully in the almond flour mixture and put it on the baking sheet. Repeat with the rest of the chicken.
  4. Bake for 10 minutes, flip, and return to the oven for 10 more minutes. If you'd like to brown the edges, broil for 1 minute at the end.
  5. Serve with mustard, ketchup, or your favorite dipping sauce.
