No-Bake Tahini Date Energy Bites

Ingredients
  • 1 cup medjool dates, soaked in hot water
  • ½ cup raw almonds
  • ¼ cup unsweetened coconut flakes
  • ¼ cup hemp seeds
  • 2 tbsp chia seeds
  • ¾ tsp coarse sea salt
  • ¼ cup tahini
  • 2 oz dark chocolate, 70% cacao or higher
Instructions
  1. Combine the first 6 ingredients in a food processor or high-powered blender and process about 5 - 7 minutes, scraping the sides as needed.
  2. Next, add in the tahini and continue processing for another few minutes, until a ball forms.
  3. Roll the dough into 12 balls and chill for 10 minutes.
  4. Melt the chocolate in the microwave at 30-second intervals or in a double-boiler, until smooth. Dip half the balls in the chocolate, and drizzle it over the other half. Then, sprinkle each with a little coarse sea salt.
  5. Store in an airtight container in the fridge or freezer.
