Ultimate Peanut Butter Chocolate Chunk Oatmeal Raisin Cookies

Serves: 10-12 cookies
Ingredients
  • ¾ cups natural creamy salted peanut butter
  • ½ cup coconut sugar
  • 1 egg
  • 1 tsp baking soda
  • ¾ tsp pure vanilla extract
  • ¼ tsp salt
  • ⅓ cup rolled oats
  • ¼ cup chocolate chunks
  • 3 tbsp raisins
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, whisk the peanut butter, sugar, and egg. Then incorporate the baking soda, vanilla, and salt.
  3. Once fully combined, fold in the oats, chocolate chunks, and raisins.
  4. Drop rounded tablespoons of dough on a lightly greased or lined baking sheet, flattening slightly.
  5. Bake for 15 minutes. Let cool on pan for 5 minutes before removing to fully cool.
  6. Store in an airtight container at room temperature for up to 1 week.
Notes
*TO MAKE VEGAN: Substitute 2 chia eggs (2 tablespoons chia seeds mixed with 6 tablespoons of water, and set aside for 3-5 minutes until gelled) for the egg. Also, make sure to use vegan chocolate chunks.
