Sweet Potato Latkes

Ingredients
  • 1 large sweet potato
  • 3 tbsp whole wheat flour
  • ¾ tsp coarse kosher salt
  • ¼ tsp black pepper
  • 1 egg
  • ¼ cup olive oil, plus more as needed
Instructions
  1. Wash and grate the potato into shoestring-like pieces.*
  2. In a mixing bowl, combine it with the flour, salt, pepper, and egg. Mix well to make sure everything is distributed evenly.
  3. Heat the oil in a large deep frying pan over a medium flame. Once hot, drop scant quarter cups of potato mixture, flattening into thin latkes. Fry for about 5 minutes, or until browned, then flip and cook for about 5 more minutes.
  4. Remove from pan and place on a paper towel-lined plate to cool slightly. Add more oil to the pan for each batch of latkes.
  5. Best served immediately.
Notes
*This is much easier with a food processor. I don't have one in school and used a hand grater, which added on several minutes to my prep time.
