Spiced Pear Baked Oatmeal

Ingredients
  • 2 cups old-fashioned oats
  • ¼ cup coconut sugar or brown sugar
  • 2 tsp cinnamon
  • 1 heaping tsp cardamom
  • 1 tsp baking powder
  • ¾ tsp salt
  • ¾ tsp ginger
  • ½ tsp nutmeg
  • 2 eggs
  • 2 tbsp coconut oil, melted
  • 1½ cups milk of choice
  • 2 tbsp honey
  • 2 tsp pure vanilla extract
  • 1 Bosc pear
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In a large mixing bowl, mix all the oats, sugar, spices, and baking powder.
  3. Next, in a medium bowl, whisk together the eggs, milk, coconut oil, honey, and vanilla. Pour wet into dry and stir to make sure everything is evenly distributed.
  4. Cut the pear into quarters and remove the core. Chop ¾ of it into small pieces and slice the remaining quarter into ⅛-inch slices.
  5. Pour half of the oat mixture into a lined 8x8 baking dish. Spread out the chopped pear evenly over the oats. Then, top with the remaining oat mixture, spreading with a spatula if needed. Arrange the pear slices into a pinwheel on top, pressing down gently.
  6. Bake for 45-55 minutes.
  7. Let cool slightly before slicing into squares. Store covered in the fridge. Reheat to serve.
