Sunbutter Dark Chocolate Bark

Ingredients
  • 6 oz dark chocolate*
  • 2 tsp Sunbutter, divided
  • 1 tbsp raw pumpkin seeds
  • 1 tbsp dried craisins
  • 1 tsp unsweetened flaked coconut
  • coarse Himalayan pink salt or sea salt, recommended
Instructions
  1. Line a small baking sheet with parchment paper.
  2. Break up the chocolate into a microwave-safe bowl. Microwave for 2 minutes, stirring every 30 seconds until smooth.
  3. Pour onto pan and spread it out, keeping it as even as possible.
  4. Drop ¼ teaspoons of Sunbutter onto the chocolate. Using a toothpick, swirl the Sunbutter through the melted chocolate.
  5. Sprinkle on the coconut, craisins, and pumpkin seeds.
  6. Freeze for 15 minutes. When hard, break into pieces with your hands. Sprinkle with salt, if desired.
  7. Store in an airtight container/bag in the freezer.
Notes
*I used 2 bars of 88% Endangered Species chocolate. Other brands I like include Lindt, Taza, and Raaka.
