Vegan Double Chocolate Peanut Butter Pancake

- 1 tsp coconut oil
- 1 small banana
- ¼ cup unsweetened almond milk
- ½ tsp pure vanilla extract
- 1 tbsp natural peanut butter
- ¼ cup cocoa powder
- 2 tbsp almond flour
- 1 tbsp coconut flour
- 1 tbsp ground chia seeds
- ½ tsp cinnamon
- 1 tbsp vegan chocolate chips
- Preheat the oven to 350 degrees F.
- In a mixing bowl, mash the banana. Stir in the liquid ingredients.
- Add the dry ingredients and mix until fully incorporated.
- Melt the coconut oil in an 8-inch cast iron skillet. Pour in the batter and top with chocolate chips.
- Bake for 10-15 minutes.
- Drizzle with peanut butter.
