Vegan Double Chocolate Peanut Butter Pancake

Ingredients
  • 1 tsp coconut oil
  • 1 small banana
  • ¼ cup unsweetened almond milk
  • ½ tsp pure vanilla extract
  • 1 tbsp natural peanut butter
  • ¼ cup cocoa powder
  • 2 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tbsp ground chia seeds
  • ½ tsp cinnamon
  • 1 tbsp vegan chocolate chips
Instructions
  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, mash the banana. Stir in the liquid ingredients.
  3. Add the dry ingredients and mix until fully incorporated.
  4. Melt the coconut oil in an 8-inch cast iron skillet. Pour in the batter and top with chocolate chips.
  5. Bake for 10-15 minutes.
  6. Drizzle with peanut butter.
