Delicata Kale Salad

Ingredients
  • FOR THE SQUASH:
  • 1 delicata squash, sliced into ¼" rings
  • olive oil spray
  • black pepper
  • coarse sea salt
  • FOR THE CHICKPEAS:
  • 1 (15 oz) can chickpeas, rinsed and patted dry
  • olive oil spray
  • ½-3/4 tsp garam masala
  • FOR THE SALAD:
  • 1 head kale
  • ½ red onion, halved and sliced
  • ½ cup grape tomatoes, halved lengthwise
  • 1.5 tbsp olive oil
  • Optional: crumbled goat cheese
Instructions
  1. Preheat the oven to 400°F. Lightly spray 2 baking sheets with olive oil.
  2. Spread out squash on one sheet. Spray with oil and season with salt and pepper to taste. Roast for 30 minutes, or until desired consistency, flipping halfway through.
  3. In the meantime, lay out chickpeas on other sheet. Spray with oil and toss to coat with garam masala. Roast for 20-25 minutes, until crispy.
  4. While the vegetables are in the oven, tear kale into bite-sized pieces and massage with olive oil.
  5. Once the vegetables are done, combine together with the kale, onion, and tomatoes.
  6. Adjust seasonings to taste. Top with goat cheese.
