Ingredients
  • 3 medium bananas, mashed
  • ¼ cup olive oil
  • ¼ cup maple syrup
  • 1 egg
  • ½ tsp pure vanilla extract
  • 1 cup whole wheat flour
  • ¾ tsp baking powder
  • 1½ tsp cinnamon
  • ½ tsp kosher salt
  • ¼ tsp nutmeg
  • ½ cup chopped strawberries
  • Optional: 1-2 tbsp toasted rolled oats (Bake in oven at 350º F for 4 minutes or until lightly toasted)
Instructions
  1. Preheat oven to 350ºF. Line 8x8 pan with parchment paper, or lightly grease.
  2. In a mixing bowl, whisk together oil, egg, maple syrup, and vanilla. Mix in the mashed bananas.
  3. Slowly add in the dry ingredients, stirring as you go to fully incorporate into the wet ingredients.
  4. Gently fold in the strawberries.
  5. Pour into pan. If desired, top with oats and sprinkle of cinnamon.
  6. Bake for about 40-45 minutes, or until toothpick inserted into center comes out clean. Allow to cool for 10 minutes in pan before slicing.
  7. Store wrapped tightly at room temperature for 2 days, or up to a week in the fridge.
